Զաթար (արաբ.` زَعْتَر‎, IPA: [ˈzaʕtar] ) խոհարարական բույս է կամ բույսերի ընտանիք : Այն նաև համեմունքային խառնուրդի անվանում է և հիմնականում օգտագործվում է որպես համեմունք։Համեմունքն իր մեջ պարունակում է հենց խոտաբույսը, քունջութի տապակած սերմեր, չորացրած աղտոր (sumac) , հաճախ աղ, ինչպես նաև այլ համեմունքներ^[1]: Որպես Միջին Արևելյան խոտաբույսերին հարակից ընտանիք՝ այն պարունակում է խնկածաղկի (Origanum, Oregano) դասին պատկանող բույսեր՝ վայրի անանուխ (ռեհան,ուրց) (basil, thyme), ուրց (Thymus vulgaris, ծագումը ուրց բառից), կորթին ( ծիթրոն) և խնկենի (savory) ^[2]: Միայն զաթար անունը ավելի շուտ վերաբերում է սիրիական խնկածաղկին, որ աստվածաշնչյան գրականության մեջ զոպան է (անգլ.` hyssop), (եբրայերեն`אזוב‎ [eˈzov]) ^[3]: Այն օգտագործվում է լևանտական խոհանոցում: Թե՛ խոտաբույսը,թե՛ համեմունքային խառնուրդը տարածված են ողջ Միջին Արևելքում^[4]^[5]:
